Many legends exist about the Mid-Autumn Festival, but the most popular one involves Chang'e and the jade rabbit. Hou Yi, Chang'e's husband, received an immortality elixir from the Queen Mother. He earned this reward by shooting down nine suns to save people from the extreme heat. However, he chose not to drink the elixir right away because he didn't want to become immortal without his wife. He gave the elixir to Chang'e to hold onto for him.

One mid-autumn day, while Hou Yi was out hunting, an evil man broke in and tried to force Chang'e to give him the elixir. To prevent this, Chang'e swallowed the potion herself. Immediately, she began to float up into the sky, flying higher and higher. Choosing to live on the moon so she could be near her husband, she became its eternal resident.

Heartbroken, Hou Yi began the tradition of making offerings to her each mid-autumn day with incense, cakes, and fruits. This is how the custom of worshipping the moon during the Mid-Autumn Festival began and was passed down through generations.

The legend also says a rabbit, as white as jade, lives on the moon with Chang'e as her companion. Known as the "Jade Rabbit," it is said to spend its time pounding the ingredients for the elixir of immortality. Over time, the jade rabbit itself became another symbol for the moon.

The Mid-Autumn Festival is observed with many traditions, some of the most popular of which include: having a dinner with family, enjoying the glorious full moon, eating the monncake. The moon cakes are as important to Mid-Autumn Festival as turkeys are to Thanksgiving Day.

To celebrate the Mid-Autumn Festival, we organized a mooncake making activity, and our team maked the mooncake together. Let's follow us and you can learn how to make a mooncake:

First step is to make the doughs. We mix the flour, water, oil until a round smooth dough forms. Then roll the dough out with a rolling pin and then roll it up into a cylinder. Let it rest for a while to make it shaggy.

Second, we should prepare the filling. In a bowl, combine all the filling ingredients: ground pork, soy sauce, oyster sauce, sugar, scallion, water, and white pepper.

Third, taking one combined dough ball. Flatten it with your hand, then use a rolling pin to roll it out into a small oval shape. And placing about 1.5 tablespoons of the chilled meat filling in the center of the dough disc. Carefully gather the edges of the dough up and around the filling. Pinch the seams together at the top to enclose the filling completely. Gently roll it in your hands to form a smooth ball.

Fourth, cracking a few raw eggs and taking the yolk, then stir and brush it on the surface of the surface of the mooncake.

Fifth, preheating oven to 350°F (180°C) and taking it to the oven. Baking the mooncakes for 25 minutes. Around the 15-minute, taking it out and brushing the egg yolk again. After that, sprinkling some sesame seeds on it.

Finally, waiting slowly for it to finish baking. Let them cool on a baking tray for a few minutes before eating. Then you can enjoy the best taste of the mooncakes.
